Chaulai Dal: Amaranth Leaves with Lentils

When it comes to leafy vegetables, my kitchen staples are spinach and fenugreek. Till a while ago, cooking with amaranth greens was uncharted territory for me. What better way to start a new year, I thought, than with tackling a new beast? And so I made my debut attempt at making chaulai dal (amaranth leaves with lentils).

Papaya Peanut Salad

I make this papaya peanut salad when the fruit is somewhere between green and yellow, having a hint of sweet but still crunchy. A light dressing works well when the papaya is at this stage. No garlic or strong sauces, more fruity goodness.

Aloo Chutney: Tangy Potato Chutney

A recipe from my grandmother’s kitchen – a tangy aloo chutney laced with mustard. The original version is made with jimikand (yam) instead of potatoes, and as those of us who cook with yam know, that vegetable is tricky to handle raw. And so we switch to the friendlier, more accessible tuber. Potato chutney is just as good and is super easy to make.
