Millet Peanut Vegetable Stir Fry

Stir-fried boiled millets with assorted vegetables, peanuts and seasoning – a healthy one-pot meal that sits just right in the lunchbox. Millet peanut vegetable stir-fry is vegetarian-friendly, gluten-free, and uses no onion or garlic.
I usually cook this with foxtail millet. You can substitute foxtail with any other beady millet.
You Need:

- Millet (any beady millet such as foxtail), boiled – 2 cups (buy here)
- Green beans – 6-7
- Red bell pepper – 1
- Carrots – 1
- Pepper – to taste
- Salt – to taste
- Green chili – 1
- Peanuts (raw, unsalted) – 1/2 cup (buy here)
- Urad dal – 1 teaspoon
- Mustard seeds – 1/2 teaspoon
- Ghee (or peanut oil for a vegan version) – 1 tablespoon (buy here)

How To Make Millet Peanut Vegetable Stir-Fry:
1. Chop the vegetables
Chop the beans, carrots, bell pepper into small peanut-sized cubes.
Slice green chili finely.
2. Fry the peanuts and dals
Heat a tablespoon of ghee in a thick-bottomed pan.
Add to the hot ghee the raw peanuts. Fry the peanuts on low heat for two minutes, tossing occasionally for even cooking. Then add half a teaspoon of mustard seeds to the ghee, and let the seeds splutter. Add a teaspoon of urad dal next.
Fry further till the urad dal turns golden-brown.
3. Sauté the vegetables
To the pan, add chopped carrots and beans. Sauté on medium flame for 3-4 minutes, stirring occasionally.
Add chopped bell peppers and chilies to the same pan. Continue to sauté till the vegetables have softened.
4. Put it all together
Tip in boiled foxtail millet to the pan. [Refer: how to boil foxtail millet]
If the boiled millet has been refrigerated before use or resting for a while, it would probably be clumpy. In this case, declump the boiled millet gently using your fingers when you add it to the pan.
Sprinkle salt and pepper to taste.
Mix well.
Cook for another 3-4 minutes on medium heat, till well-blended.
Millet peanut vegetable stir fry is ready.
Serve millet peanut vegetable stir fry on its own as a one-pot meal, or on the side with raita and pickle.
