Patriotic Raita for Indian Independence Day

15th August is round the corner. To celebrate India’s Independence day, let the tricolor inspire our food. Here’s an idea in saffron, white and green – a patriotic raita.

Carrot Coriander Raita

You Need:

  • Plain yogurt – 2 cups
  • Carrots – 2, medium
  • Coriander – 1/2 bunch
  • Green chili – 1
  • Raisins – 1 tablespoon
  • Salt – 1/3 teaspoon
  • Sugar – a pinch (optional)
  • Roasted cumin powder – 1/3 teaspoon

How To Make Tricolor Raita:

Whisk yogurt with salt and sugar till smooth.

Wash, scrape and grate carrots.
Wash and chop coriander and chili finely.

Assemble the raita to resemble the tricolor:

Spoon the whisked yogurt into a flat container, preferably a rectangular one (length: breadth = 3:2).

After the yogurt has settled (about 20 minutes), sprinkle grated carrots over the top third of the yogurt base and grated coriander over the bottom half of the yogurt base.

Sprinkle roasted cumin powder in as close a shape to the Ashok chakra as you can manage.

Serve tricolor raita with rice, dal and curry. Happy Independence day!
