Potatoes with Soya Bean Granules

A dish with minimal ingredients that cooks quickly, tastes good and gives you a generous dose of proteins. Sounds good? Here is the recipe of potatoes with soya bean granules.
You Need:
- Potatoes – 2 large, peeled and chopped to 1″slices
- Soya bean granules – 1 cup
- Turmeric powder – 1 teaspoon
- Red chili powder – 1/2 teaspoon
- Oil – 2 teaspoons
- Mustard seeds – 1 teaspoon
- Salt – to taste
How To Make Potatoes with Soya Bean Granules:
Boil the soya bean granules in 3 cups of salted water for 5 minutes. Let it stand for another 10 minutes. Strain, wash with cold water and squeeze it dry.
Meanwhile, in a non-stick pan, heat oil and crackle the mustard seeds. Add potatoes and cook, covered, on medium heat. Stir occasionally till potatoes are 80% cooked (around ten minutes, depending on the thickness of the slices).
Add turmeric powder, salt and mix. Add soya bean granules and mix again. Cover and cook for another five minutes, stirring occasionally.
Add the chili powder, mix and cook another minute. Serve potatoes with soya bean granules alonside rice or rotis.
Tips:
- How to check if the potatoes are cooked? Prick a potato slice with a fork. If the fork needs pressure to pass through, it needs further cooking. If the fork goes in easily, the dish is ready. If the potato slice disintegrates when the fork pricks it, the dish is overcooked – take it off the fire immediately!
- You could pre-treat the soya bean granules in different ways. Some soak it in regular water overnight, another boils it for 15 minutes and gives no standing time like I do, yet another does not boil but fries it. Do what works for you; the purpose is to take away the rawness of the soya bean.
- I add the chili powder towards the end in this dish since I like its vibrant red to show against the other plainer colors. If you’d rather have the masalas cooked more, add the chili powder along with the turmeric.
